A Chiltern Venison Feast at The Oarsman in Marlow

Prepare your palate for an evening of venison virtuosity at The Oarsman, Marlow’s beloved bistro-pub and wine haven, on Thursday 5th September. The Oarsman is rolling out the red carpet for a five-course feast celebrating the rich flavours of the season’s finest venison.

The dinner (£55pp) will showcase the versatility of local, healthy and sustainable venison, sourced by Geoff Wicket from Chiltern Venison. The Oarsman work closely with Geoff, sharing a synergy for ethical food sourcing and sustainability, with the wild deer enjoying a free-roaming, stress-free life in the countryside, with no steroids or antibiotics.

Chiltern Venison aims to balance the population of the deer with what the landscape can support. Wild deer today are the biggest threat to woodland in the UK, as their growing population outgrows the food supply. Aside from eating wildflowers and the shrub layer that would usually be a habitat for a whole range of birds, mammals and insects – they also go further afield and cause a great deal of damage to farmers’ crops. A balanced population of deer species and genders is vital for biodiversity and the ecosystem as a whole.

Esteemed Head Chef Scott Smith has crafted unique dishes where every bite tells a story. Begin with a delicate venison tartare beautifully paired with pickled mushrooms and a succulent roasted loin served with salt-baked beetroot and cavolo nero. A venison-braised faggot will be perfectly complemented by a silky celeriac purée, pickled pear and crispy hispi.

For those who prefer vino with their venison, each course can be harmoniously paired with a curated selection of wines from The Oarsman’s owner and resident oenophile Nigel Sutcliffe for an additional £50pp. Embark on a vinous voyage through the Old and New Worlds, with exceptional pours from Alsace, Piedmont, Tuscany and New Zealand.
